Home-made Beans ‘n Bacon

Yes, we all love baked beans, but they can be even better when you make them yourself and this recipe is quick and easy, perfect for a hearty breakfast or Dad.

Ingredients

  • 2-3 rashers bacon, discard the rind and cut into 2cm pieces
  • 1 small red onion, peeled and cut into wedges
  • 1 large mild red chilli, deseeded and chopped
  • 4 sundried tomato, sliced
  • 400 gram can cannelini beans, drained and rinsed
  • 1/4 cup water
  • 1/2 large juicy tomatoes, blanched
  • 1 tblsp freshly chopped parsley

Method

  1. Cook the bacon in a pan with a dash of oil until crisp and golden. Set aside.
  2. Place the onion and chilli in the pan in the residue oil and gently cook until just tender but not brown. Add the sundried tomatoes, cannelini beans, water and cooked bacon. Cover and simmer very gently for 8-10 minutes, sweeten if desired. Dark sugar is best or use a teaspoon or two of golden syrup.
  3. Halve the tomatoes and squeeze out the juice and seeds. Chop the flesh and add to the beans and warm through. Season with salt and pepper.

Cooks Tips

Cannellini beans are also called butter beans. Not to be confused with fresh butter (yellow) beans.
