Corned Beef Hash

Corned Beef Hash

Having leftovers in the fridge means that you can quickly prepare an easy meal, such as this hash made from the remains of (Honey Glazed) Corned Beef.

Ingredients

  • 4-6 tblsp olive oil
  • 2 large orange fleshed kumara, peeled and diced
  • 1 onion, peeled and diced
  • 2 tsp minced garlic
  • 1 green pepper, diced
  • 1 red chilli, deseeded and finely chopped
  • ½ cup gherkins, diced
  • 350 grams cooked corned beef, sliced
  • ½ cup sundried tomatoes, diced
  • 2 tblsp chopped fresh parsley
  • ¾ cup grated tasty cheese

Method

  1. Heat the oil in a large pan and add the diced kumara and onion. Cook over a moderate heat stirring occasionally until almost cooked.
  2. Add the garlic, green pepper, chilli and gherkin and toss quickly in the pan.
  3. Arrange the corned beef slices over the cooked vegetables. Combine the sundried tomatoes, parsley and cheese and scatter on top. Place under a fan grill, at 220°C for 4-5 minutes until the cheese is golden and the beef hot. Serve immediately with steamed green beans if wished.
