Hazelnut Biscuits

Hazelnut oil with its deep warm, toasty flavour gives these biscuits a truly decadent hazelnut taste. Perfect with coffee.

Ingredients

  • 1 cup hazelnut oil
  • ¾ cup sugar, caster is best here
  • 1 egg
  • 2 cups flour
  • 1 tsp baking powder
  • ¼ cup finely chopped toasted hazelnuts

Decoration

  • about 15 hazelnuts, halved

Method

  1. .Preheat the oven to 160°C. Lightly grease 1-2 trays or line with baking paper.
  2. .Mix together the hazelnut oil, sugar and egg. Sift the flour and baking powder together and stir into the bowl with the finely chopped hazelnuts.
  3. Roll heaped teaspoonful lots of the mixture into balls and place on a greased baking tray. Place a halved hazelnut into the centre of each biscuit.
  4. Bake for 15-20 minutes until lightly golden. Cool on a cake rack. Store in an airtight container away from direct light or heat.

Cooks Tips

- For a more economical recipe, use half hazelnut oil with half canola oil.
