Savoury cheese biscuits

The simplest recipe for these moreish cheesy-biscuits uses equal quantities by weight of flour, butter and grated tasty Cheddar. Throw everything in the food processor for a very delicious nibble in minutes.

Ingredients

  • 125 grams butter, chilled and diced
  • 125 grams Cheddar or Edam cheese, grated
  • 125 grams flour
  • 1 teaspoon curry powder, optional
  • toppings: sesame seeds, poppy seeds, finely chopped nuts of your choice

Method

  1. Preheat the oven to 200ºC. Line 1-2 trays with baking paper.
  2. Put the butter, cheese, flour and curry powder, if using, into a food processor and process until the mixture forms a stiff ball of dough.
  3. Turn out onto a lightly floured bench and roll the dough out to ½cm thickness.
  4. Cut into 4-5cm rounds or your preferred shapes.
  5. Place on the prepared trays and sprinkle with one of the selected toppings.
  6. Bake in the preheated oven for 12-15 minutes or until golden and crisp.
  7. Cool 1 minute before transferring carefully onto a cake rack to cool completely.
  8. Store in an airtight container. Freeze when cold, if wished.

Cooks Tips

Variations: - Use ½ whomemeal and ½ plain flour - Use half Cheddar or Edam and half blue cheese
