Pasta with courgettes and pine nuts

Quick, easy, tasty meal the whole family will enjoy

Ingredients

  • spaghetti, fettucini or linguine for 4 serves
  • 1 generous knob of butter
  • 3 courgettes, grated or sliced
  • 2 tsp minced garlic
  • ΒΌ cup roasted pinenuts
  • a handful each of chopped fresh basil and parsley
  • 1 cup diced marinated feta
  • sliced pecorino cheese to garnish

Method

  1. Cook plenty of spaghetti, fettucini or linguine in boiling salted water until tender. Drain and return to the saucepan to keep warm.
  2. Melt a generous knob of butter in a pan and pan-fry courgettes with minced garlic until the courgettes are tender.
  3. Toss though the pasta with pinenuts, basil and parsley and marinated feta.
  4. Season and garnish with sliced pecorino cheese and serve immediately.

Cooks Tips

The pine nut is the seed of the pine tree, and is enclosed in the pine cone. The finest pine nuts come from the trees in the northern hemisphere. Pine nuts, like other nuts, are high in oil content and should be kept in the freezer until required to prevent them becoming rancid. While high in fat, pine nuts have around 30 per cent of easily digestible protein.
