Mexican cashew and bean patties

Mexican cashew and bean patties

Using flavoured canned beans and toasted cashew nuts, you can whip these scrubby patties up in no time at all.

Ingredients

  • 1 onion, peeled and finely chopped
  • 1 teaspoon minced garlic
  • 1 tablespoon Mexican seasoning
  • 425 gram can Mexe-Beans, well drained and mashed
  • 1 teaspoon dried oregano or 1 tablespoon chopped fresh oregano
  • 1 egg lightly beaten
  • 1 cup toasted cashew nuts, finely chopped
  • 1 cup fresh breadcrumbs

Method

  1. Heat a dash of oil in a non-stick fry pan. Cook the onion and garlic for 5-6 minutes until they soften. Remove from the heat and mix with Mexican seasoning, mashed canned beans, oregano, egg and the chopped cashew nuts. Season with salt and pepper.
  2. Shape mixture into 16-18 small patties and toss in the breadcrumbs.
  3. Heat a little oil in a non-stick frying pan and cook the pattes for 5-6 minutes each side until golden brown. Serve with avocado salsa and an oregano-spiced tomato salsa.
