Pumpkin, prune and orange muffins

Pumpkin, prune and orange muffins

These are wonderfully moist and if you do not have prunes use dates or raisins.

Ingredients

  • 3 cups flour
  • 2 tablespoons baking powder
  • pinch salt
  • ½ cup caster sugar
  • 1 cup chopped moist prunes
  • grated rind of 2 oranges
  • 1 cup orange juice
  • 1 cup cooked pumpkin, mashed
  • 2 eggs
  • ¾ cup milk
  • 100 grams butter, melted and cooled
  • icing sugar for dusting

Method

  1. Sift the flour, baking powder, salt and sugar into a large bowl and toss through the prunes. Make a well in the centre.
  2. In a jug, mix together the orange rind and juice, mashed pumpkin, eggs and milk. Stir into the dry ingredients and fold in the melted butter.
  3. Divide the mixture among 12-16 well-greased muffin tins.
  4. Bake at 220ºC for 20 minutes until the muffins are well-risen and golden. Dust with icing sugar to serve.

Cooks Tips

- The best pumpkin for this is a crwn or a grey pumpkin. It's a firm-fleshed pumpkin that when mashed will not be too moist.
