Home-made Pork Sausages With Prune And Rum Butter

For a change from ham with the classic Christmas dinner, try these homemade flavoursome pork sausages. They complement the turkey very well.


  • 1 kg pork mince (see Cook’s Tips)
  • 4 spring onions, trimmed and finely chopped
  • 1 cup chopped fresh parsley
  • 2 tblsp chopped fresh rosemary
  • 2 tblsp chopped fresh oregano
  • 1 cup finely chopped dried apricots
  • 2 tsp minced fresh garlic
  • 2 tblsp grated lemon rind
  • 1/2 cup chopped green stuffed olives
  • 2 tsp salt
  • 1 tsp ground black pepper


  1. Mix together thoroughly the minced pork, spring onion, parsley, rosemary, oregano, apricots, garlic lemon rind, olives, salt and pepper.
  2. Divide the mixture into 20 portions and roll each into a neat sausages about 10cm long.
  3. Heat a little oil in a frying pan and brown the sausages. Add to the roasting dish and cook with the turkey for the last 20 minutes’ cooking time. Serve with the turkey, gravy and Prune and Rum Butter.

Cooks Tips

Ask your butcher to make the mince from the pork belly so that it has a nice amount of fat in the pork mince to ensure the sausages are moist and juicy when cooked.
