Ros's Waldorf salad includes dried cranberries, which she says add a refreshing tartness to the sweet Honeycrisp apples that she prefers to use as the apple does not brown when cut. Ros's preferred dressing is a yoghurt option, but she says most bokes they like the classic Highlander Condensed Milk dressing!
Ingredients
- 2 cups chopped diced apples (with skin on)
- 1½ teaspoons fresh lime juice
- 1/3 cup chopped celery
- ¼ cup dried cranberries or raisins
- ¼ cup (or more) chopped walnuts
- Dressing
- 1/3 cup plain unsweetened yoghurt
- ½ teaspoon grated lemon rind
- 1/8 teaspoon or a good pinch ground nutmeg
Method
- Toss the apples with the lime juice before adding the celery, cranberries or raisins and walnuts.
- Mix the dressing ingredients together. Add a touch of cream, if wished. Stir the dressing into the apple mix. Serve cold. Delicious with cold ham, pork or chicken.
Cooks Tips
- While honeycrisp apples will stay white when cut, most apples with oxidise and turn brown. To prevent this, put slices in acidulated water - that's water with lemon juice or a dash of vinegar. - Add half an apple to a cake tin to help keep a cake moist. - Use pears or nashi in place of apples, and lemon juice and rind in place of lime.
