Turkey And Pawpaw Salad With Basil And Crab Dressing

Blend the traditional with the modern on Christmas Day with this super turkey salad.

Ingredients

  • grated rind two oranges
  • 2 tblsp chopped fresh chives
  • 50 grams butter , softened
  • salt and pepper
  • 2 double boneless turkey breasts, with skin on

Basil and Crab Dressing

  • 1 cup good quality mayonnaise
  • 250 grams cooked crabmeat
  • 1/2 tsp prepared mustard
  • about 10-12 fresh basil leaves, finely sliced
  • salt, pepper and lemon juice to taste

To Serve

  • slices pawpaw or mango
  • crisp lettuce leaves
  • chopped fresh parsley or basil to garnish

Method

  1. Mix the orange rind, chives and butter together with a seasoning of salt and pepper. Spread this over the skin side of the turkey breast and place them on a foil-lined tray.
  2. Roast at the top of a 190ÂșC oven for 45 minutes. Cover and stand 10 minutes before serving hot, or alternatively, cool under cover and refrigerate until required.

To Serve

  1. Slice the turkey and arrange on a lettuce leaf-covered platter, interwoven with sliced pawpaw or mango and topped with the crab mayonnaise. Serve with new potatoes and fresh greens.

Dressing

  1. Mix the mayonnaise with the crab meat, mustard and basil leaves. Season with salt, pepper and lemon juice.
