Triple peanut cookies

If your family love peanuts in any form then this is their recipe! Peanuts, lightly roasted with chunky peanut butter and peanut chips all crammed into a buttery cookie!

Ingredients

  • 150 grams unsalted butter
  • ¾ cup brown sugar
  • 2 tablespoons maple syrup (or golden syrup)
  • ½ cup chunky peanut butter
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1½ cups flour
  • ¾ teaspoon baking soda
  • ½ cup lightly roasted peanuts (skins optional)
  • ½ cup peanut chips

Method

  1. In a clean bowl, beat together the butter, sugar, syrup and peanut butter until the mixture is light and creamy.
  2. Add the egg and the vanilla essence and beat well.
  3. Sift the flour and baking soda together and fold into the creamed mixture with the peanuts and peanut chips.
  4. Place tablespoonfuls of the mixture onto a well-greased baking tray and press each down with the palm of your hand.
  5. Bake at 190ºC for about 10-12 minutes until a light golden colour. At this stage you will get a slightly chewy cookie, so cook an extra 2-3 minutes if a drier cookie is preferred. Transfer to a cake rack to cool. Store in an airtight container.

Cooks Tips

- Always pack brown sugar into the measuring cup firmly so that when it's turned out the sugar holds the shape of the cup.
