Spicy Lamb Or Chicken In Pita Rolls

Wraps are in! Easy to make and eat on the run

Ingredients

  • 500 grams lean chicken or lamb steaks, finely sliced
  • 1 tblsp olive oil
  • 1 tsp red chilli paste
  • 1 tsp ground cumin
  • 1/4 cup thick natural yoghurt
  • 1 tsp freshly chopped mint
  • 1/2 telegraph cucumber (cut lengthways, deseeded and sliced)
  • 4 large pita breads or Indian Naan breads
  • 200 grams Lisa’s Organic Hummus with Roasted Garlic
  • 1/2 red onion, peeled and finely chopped
  • 4-6 crisp lettuce leaves – cos or ice berg, shredded

Method

  1. Toss the lamb or chicken in the oil, chilli and cumin. Heat a frypan or wok, brown the chicken or lamb strips.
  2. Combine the yoghurt and mint together.
  3. Spread the pita or naan breads with Lisa’s Organic Hummus with Roasted Garlic. Place the cooked chicken or lamb over the hummus with a little red onion and shredded lettuce. Top with the minted yoghurt.
  4. Roll the breads up tightly to serve immediately.
