This cake is made with mayonnaise, making it a dairy free cake.
Ingredients
- 130 grams non-dairy dark chocolate
- 1 1/2 cups flour
- 1 tsp baking powder
- 1 cup mayonnaise
- 3/4 cup sugar
- 2 tsp vanilla essence
- 3 eggs
- 2 cups frozen raspberries
- Icing sugar
Method
- Chop chocolate up roughly and place in a large bowl. Sift over flour and baking powder.
- 2. Beat mayonnaise, sugar, vanilla essence and eggs together to combine. Add to chocolate mixture with raspberries and combine. Pour into a greased base-lined 28 x 18cm brownie tin. Bake at 180 degrees C for 30 minutes. Turn out onto a wire rack to cool. Sprinkle with icing sugar.
