White Chocolate and Orange Butter Biscuits

Crispy and buttery, these elegant biscuits, loaded with white chocolate and scented with biscuits with orange rind, are truly delicious.

Ingredients

  • 175 grams butter, softened (preferably unsalted)
  • 3/4 cup caster sugar
  • grated rind 2 oranges
  • 2 egg yolks
  • 100 grams white chocolate, chopped finely
  • 2 cups self raising flour, sifted

Method

  1. Preheat the oven to 170 degrees Celsius. Grease two baking trays.
  2. Into a food processor fitted with the metal blade, put the butter, sugar and orange rind and process together until well mixed. Add the egg yolks and process again.
  3. Scatter into the chocolate and flour and pulse to mix. Turn out of the bowl, form into a ball and wrap in plastic wrap. Refrigerate for 1 hour. On a floured board, roll out the dough to 3mm thickness. Cut into small rounds or shapes of your choice. Place on the prepared trays.
  4. Bake in the pre-heated oven for 12-15 minutes or until the biscuits are just browning on the edges. Transfer to a wire rack to cool. Join with butter icing when cold and dust with icing sugar to serve.
  5. Butter Icing: Beat together 100 grams butter and 1 1/2 cups icing sugar to make a smooth icing. Flavour with vanilla essence and thin with a dash of milk if wished.
