Southern Indian curry powder

Southern Indian curry powder

Ingredients

  • 8 small dried red chillies
  • 6 tablespoons coriander seeds
  • 1 tablespoon cumin seeds
  • 1 teaspoon black mustard seeds
  • 1½ teaspoons fenugreek seeds
  • 1½ teaspoons black peppercorns
  • 2-3 cardamom pods, crushed
  • 10 dried curry leaves
  • 1 teaspoon ground ginger
  • 1 tablespoon ground turmeric

Method

  1. Dry roast the whole spices by putting them in a hot fry pan and stirring over a medium heat for 2-3 minutes or until the mixture is fragrant.
  2. Remove from the heat and pour onto a plate to arrest any further cooking. Place in a coffee or spice grinder with the dried curry leaves, ground ginger and turmeric and process to a fine powder. Store in an airtight container.

Cooks Tips

The dried chillies that are most commonly sold in spice packets are small and fiery hot, so use with care. Eight is enough to make a warm-ish blend but if you are a hot chilli fan, add a few more.
