Maid Of Honour Tarts

Maid Of Honour Tarts

You don't need a wedding to make these tasty treats.

Ingredients

  • 1 quantity rich short or basic sweet pastry (see recipes on our website)
  • 2 eggs, lightly beaten
  • 200 gram tub ricotta cheese
  • 50 grams butter, melted and cooled
  • 2 tblsp brandy
  • 2 tblsp caster sugar
  • ¼ tsp ground nutmeg
  • 70 gram packet ground almonds
  • grated rind and juice one large juicy lemon
  • 2 tblsp currants
  • 2-3 tblsp slivered almonds

Method

  1. Roll out the pastry on a lightly floured surface. Cut out rounds and use to line patty pan shaped tins. There should be sufficient to line 12-16 depending on the size of the patty pan moulds. Chill in the refrigerator while making the filling.
  2. Beat together the eggs, ricotta, butter, brandy, castor sugar and nutmeg. Stir in the ground almonds, lemon rind and juice and currants. Mix well. Fill the pastry tarts with the egg and ricotta mixture. Sprinkle a few slivered almonds on top.
  3. Bake the tarts at 200°C for 20 minutes or until golden and the filling is firm to the touch.
  4. Serve warm and if wished, serve sprinkled with icing sugar and a little cinnamon.

Cooks Tips

Refreeze the remaining pastry for later use. If wished use pre-rolled frozen pastry sheets.
