These tartlets are very rich. They're ideal to serve with coffee.
Ingredients
- 2 egg yolks
- ½ cup macadamia-nut oil
- 3 tblsp icing sugar
- 16-18 mini sweet tartlet cases
Method
- Whisk the egg yolks together in a bowl until smooth.
- Gradually whisk in the oil drop by drop until a quarter of the oil has been added. Add the remaining oil in a steady stream, whisking constantly until all the oil has been added.
- Add the icing sugar and stir to combine. The icing sugar will melt into the mayonnaise making it softer. For a thinner mayonnaise, mix in a little water. Place the mayonnaise into the tartlet cases and decorate with slices of banana, fresh dates or pear.
