Spicy Yoghurt Marinade

Sweet flavours of fruit chutney and spices will bring chicken drumsticks to life.

Ingredients

  • 2 spring onions, trimmed and finely chopped
  • 2 tblsp fruit chutney
  • 1 tsp each ground ginger and garam masala
  • 2 tblsp honey
  • ½ cup natural unsweetened yoghurt
  • 8-12 drumsticks with skin removed

Method

  1. In a bowl blend together the spring onions, chutney, ginger, garam masala, honey and yoghurt. Pour the yoghurt mix over the drumsticks in a non-metallic dish and turn to coat well. Cover and refrigerate for 2-3 hours, or leave overnight.
  2. Bake at 180°C for 35-40 minutes until the legs are well cooked. If you are barbecuing chicken drumsticks or thighs, (portions with bones in them) cook over a moderate heat to ensure slow even cooking without burning the marinade. Serve hot or cold.
