Sweet flavours of fruit chutney and spices will bring chicken drumsticks to life.
Ingredients
- 2 spring onions, trimmed and finely chopped
- 2 tblsp fruit chutney
- 1 tsp each ground ginger and garam masala
- 2 tblsp honey
- ½ cup natural unsweetened yoghurt
- 8-12 drumsticks with skin removed
Method
- In a bowl blend together the spring onions, chutney, ginger, garam masala, honey and yoghurt. Pour the yoghurt mix over the drumsticks in a non-metallic dish and turn to coat well. Cover and refrigerate for 2-3 hours, or leave overnight.
- Bake at 180°C for 35-40 minutes until the legs are well cooked. If you are barbecuing chicken drumsticks or thighs, (portions with bones in them) cook over a moderate heat to ensure slow even cooking without burning the marinade. Serve hot or cold.
