Spiced Mushroom Parcels

This recipe has been sent to us by Naashia Mohamed - as part of the Mushroom Competition.

Ingredients

  • 1 tsp crushed garlic
  • 1 tsp grated ginger
  • 2 tblsp lime juice
  • 2 finely chopped red chillies
  • 1/2 tsp shrimp/anchovy paste (optional)
  • pinch of cayenne pepper
  • salt and pepper
  • 50 grams freshly grated coconut
  • handful of chopped fresh coriander
  • 250 grams sliced mushrooms

Method

  1. Mix together all the ingredients.
  2. Cut out four large squares of cooking paper, aluminium foil or banana leaves. Divide the mushroom mixture between the four sheets and fold each one up into a neat parcel, securing with toothpicks, if necessary.
  3. Bake at 180 degrees C for 30 minutes.
