Ingredients
- 1 tsp crushed garlic
- 1 tsp grated ginger
- 2 tblsp lime juice
- 2 finely chopped red chillies
- 1/2 tsp shrimp/anchovy paste (optional)
- pinch of cayenne pepper
- salt and pepper
- 50 grams freshly grated coconut
- handful of chopped fresh coriander
- 250 grams sliced mushrooms
Method
- Mix together all the ingredients.
- Cut out four large squares of cooking paper, aluminium foil or banana leaves. Divide the mushroom mixture between the four sheets and fold each one up into a neat parcel, securing with toothpicks, if necessary.
- Bake at 180 degrees C for 30 minutes.
