Spanish Pork Chops

Dinner doesn’t come much easier than this no-fuss recipe, that’s almost a meal in one dish. Just a few greens are needed to complete your meal.

Ingredients

  • 500 grams waxy (3-4 medium) potatoes, peeled
  • 1 onion, peeled and diced
  • 8 olives, optional
  • 400 gram can seasoned tomatoes (see cooks tip)
  • 1/2 cup chicken stock
  • 4-6 New Zealand pork loin chops
  • dash of oil

Method

  1. Slice the potatoes thinly and place in the bottom of a lasagne-style dish.? Scatter over the onion, olives then pour over the canned tomatoes and stock.
  2. Quickly brown the pork chops in a dash of oil in a hot pan on both sides and place on top of the tomatoes.
  3. Bake at 200°C for 40 minutes until the potatoes are tender and the pork chopes are crispy golden and cooked. Serve garnished with chopped fresh herbs like parsley or chives if wished.

Cooks Tips

Use canned tomatoes with extra flavour such as Italian Seasoned Tomatoes, Mediaterranean Tomatoes, Tomatoes with Courgettes and Onions, Cajun-style or Moroccan Tomatoes.
