Smoked Chicken And Spinach Salad With Hot Bacon Dressing

A quick, easy and salad that is healthy and tasty.

Ingredients

  • 4 Portobello or flat mushrooms, sliced
  • 1 pepper, sliced (or use ½ red and ½ yellow)
  • 1 double-smoked chicken breast, skin removed
  • ½ cup snow pea sprouts
  • ¼ cup crunchy bean combo sprout mix
  • 1/2 cup fresh spinach leaves
  • 2-3 rashers bacon, trimmed of rind and sliced
  • 2 tblsp olive oil
  • 1 green chilli, deseeded and diced
  • 2 tblsp honey
  • 2 tblsp cider vinegar

Method

  1. Cook the mushrooms and pepper in a dash oil for 3-4 minutes until softened; cool. Slice the chicken breast and place in a large bowl with the mushrooms, peppers, sprouts, bean combo and spinach leaves.
  2. Cook the bacon in the olive oil until it is just crispy. Add the chilli and toss in the hot mix. Add the honey and vinegar, remove from the heat and stir, scraping up any sediment from the pan. Pour quickly over the salad. Toss and serve. Garnish with fresh parsley if wished.

Cooks Tips

Smoked chicken has a good long shelf life, so keeping a double breast in the refrigerator helps make a quick meal when you’re in a hurry. Try smoked fish in place of smoked salmon. With so many trendy lettuce mixes available we often forget about good old spinach. It is now readily available in small leaves, pre washed bags. Alternatively you could use mesclun here. With so many different honeys available in the supermarkets today, it is very easy to vary the flavour of this dressing. For stronger honey flavours, try Rewarewa or Manuka honey or for a mild flavour try Clover honey.
