Roast Pumpkin Pizza

Ingredients

  • 4 small pizza rounds (or use pita breads)
  • 1/2 cup favourite tomato pasta/pizza sauce
  • about 400 gram roasted pumpkin (use any leftover)
  • 200 grams marinated feta, diced
  • 1/2 cup grated cheddar cheese
  • 8-10 whole sundried tomatoes
  • 1/4 cup pesto
  • a handful or two of pinenuts to garnish
  • about 12 black olives

Method

  1. Spread the pizza rounds with the tomato sauce.
  2. Dice the cooked pumpkin and scatter on top with the diced feta. Arrange the whole sundried tomatoes on top and then sprinkle over the grated cheese.
  3. Fan bake at 220°C for 12-15 minutes until well cooked and golden.
  4. Sprinkle each with pesto, pinenuts and black olives.
