Ingredients
- 4 small pizza rounds (or use pita breads)
- 1/2 cup favourite tomato pasta/pizza sauce
- about 400 gram roasted pumpkin (use any leftover)
- 200 grams marinated feta, diced
- 1/2 cup grated cheddar cheese
- 8-10 whole sundried tomatoes
- 1/4 cup pesto
- a handful or two of pinenuts to garnish
- about 12 black olives
Method
- Spread the pizza rounds with the tomato sauce.
- Dice the cooked pumpkin and scatter on top with the diced feta. Arrange the whole sundried tomatoes on top and then sprinkle over the grated cheese.
- Fan bake at 220°C for 12-15 minutes until well cooked and golden.
- Sprinkle each with pesto, pinenuts and black olives.
