Quick Raspberry Chocolate Cake

This cake is made with mayonnaise, making it a dairy free cake.

Ingredients

  • 130 grams non-dairy dark chocolate
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 cup mayonnaise
  • 3/4 cup sugar
  • 2 tsp vanilla essence
  • 3 eggs
  • 2 cups frozen raspberries
  • Icing sugar

Method

  1. Chop chocolate up roughly and place in a large bowl. Sift over flour and baking powder.
  2. 2. Beat mayonnaise, sugar, vanilla essence and eggs together to combine. Add to chocolate mixture with raspberries and combine. Pour into a greased base-lined 28 x 18cm brownie tin. Bake at 180 degrees C for 30 minutes. Turn out onto a wire rack to cool. Sprinkle with icing sugar.
