Ingredients
- 1 cup cooked orzo pasta or rice
- 1/2 cup grated cheese (try gruyere or edam cheese)
- 50 grams crumbled blue cheese
- 100 grams finely diced ham
- 2 eggs
- salt, pepper and prepared mustard to season
- 4 medium to large courgettes
Method
- Mix together the pasta or rice, cheeses, ham and eggs. Season well with salt, pepper and mustard to taste.
- Prick the courgettes with a fork and microwave on high power for 5 minutes or until they are just softened. (Cooking time will depend on the wattage of the microwave and the size of the courgettes).
- Cut the courgettes in half lengthwise and scoop out the center. Chop roughly and add to the cheese mixture. Re-fill the courgettes.
- Bake at 200 degrees Celsius for 25 minutes or until hot and golden.
