Ingredients

  • 1 cup cooked orzo pasta or rice
  • 1/2 cup grated cheese (try gruyere or edam cheese)
  • 50 grams crumbled blue cheese
  • 100 grams finely diced ham
  • 2 eggs
  • salt, pepper and prepared mustard to season
  • 4 medium to large courgettes

Method

  1. Mix together the pasta or rice, cheeses, ham and eggs. Season well with salt, pepper and mustard to taste.
  2. Prick the courgettes with a fork and microwave on high power for 5 minutes or until they are just softened. (Cooking time will depend on the wattage of the microwave and the size of the courgettes).
  3. Cut the courgettes in half lengthwise and scoop out the center. Chop roughly and add to the cheese mixture. Re-fill the courgettes.
  4. Bake at 200 degrees Celsius for 25 minutes or until hot and golden.
