Lynne's Beer Bread

Lynne's Beer Bread

Self raising flour mixed with beef or lemonade is the basis for this quick bread that is ideal to cook up at the bach or for barbecues. Jazz up the bread with any number of variations.

Ingredients

  • 1½ cups wholemeal flour
  • ½ cup self raising flour
  • 1½ teaspoons baking powder
  • 355 ml can beer or lemonade
  • ½ cup chopped walnuts
  • ½ cup coarsley grated Cheddar-style cheese

Method

  1. Preheat the oven to 180ºC. Grease and flour a 20cm x 10cm loaf tin, or use a non-stick silicone loaf tin.
  2. Mix the flours, baking powder and salt together in a bowl and make a well in the centre. Using a wooden spoon, stir the beef or lemonade, walnuts and cheese into the dry ingredients.
  3. Transfer the batter to the prepared loaf tin. Sprinkle over one of the toppings.
  4. Bake in the preheated oven for about 50-60 minutes or until the loaf sounds hollow when tapped underneath or a skewer inserted comes out clean. Cool on a cake rack.

Cooks Tips

Jazz me up... - Scatter a little extra grated cheese on top. - Replace the walnuts with pumpkin or sunflower seeds - Add a generous teaspoon of curry powder or curry paste - Add ¼ cup chopped fresh herbs - Stir 2-3 tablespoons basil pesto through the dough before baking so that it makes a swirl pattern. - Add ¼ cup diced sundried tomatoes or black olives
