Hot Smoked Salmon And Olive Pizza

Serves: 4-6

Ingredients

2 x 23 cm pre-made pizza bases

350-500 grams hot smoked salmon, flaked

1 cup of your favourite Italian-style tomato pasta or pizza sauce

2 tblsp sundried tomato pesto

300 grams bocconcini cheese, sliced

1 chargrilled red pepper, sliced

¼ cup oregano leaves

½ cup chopped black olives

½ cup semi-dried tomatoes in oil, well drained and finely chopped


Method

1.  Brush the pizza bases with oil. Mix together the tomato sauce with the sundried tomato pesto.

2.  Spread each pizza with half the tomato mixture. Top with half the flaked salmon, bocconcini slices and red pepper slices.

3.  Bake at 230ºC for 12-15 minutes until golden and the cheese has melted. Sprinkle each pizza with half the oregano leaves, olives and semi-dried tomatoes. Serve drizzled with olive oil if wished.


Cooks Tips

Variation: If you're cooking for two, halve the ingredients and make one large pizza. Alternatively, you may prefer to make individual pizzas - instead of pizza bases, try mini pita breads which only require about 8-10 minutes cooking time and come up lovely and crispy.
