1 kg fresh figs
3 oranges
2 tblsp lemon juice
1 kg sugar
1. Trim the end stalks from the figs and cut the fruit into 2cm dice. Grate the rind from the oranges. Cut away the white pith and then segment the orange.
2. Put the figs, orange rind and segments and lemon juice into a bowl with the sugar. Cover and leave overnight.
3. Next day place into a preserving pan and slowly bring to the boil, stirring regularly until the sugar has dissolved. Bring to the boil skimming off any scum as it rises, and boil for about 20 minutes, until the jam reaches setting point Allow the bubbles to subside and then bottle into hot sterilised jars Seal and label.
Fresh figs make a delightful jam.
