Family Self Saucing Chocolate Pudding

Jean-Luc is in heaven whenever we make this pudding. It requires lashings of cream or icecream to accompany to make a really yummy family dessert.

Ingredients

  • 1½ cups self rising flour
  • 2 tblsp cocoa
  • ½ cup sugar
  • 1 cup milk
  • 100 grams butter, melted
  • 1 tsp vanilla essence

Sauce

  • 2 cups boiling water
  • ½ cup sugar
  • 2 tablespoons cocoa

Method

  1. Preheat the oven to 180ºC. Lightly grease a 6-cup capacity ovenproof dish.
  2. Sift flour and cocoa into a bowl. Stir in the sugar and make a well in the centre.
  3. Pour in the milk, butter and vanilla essence and mix quickly with a light hand using a slotted spoon to form a stiff mixture.
  4. Spread the batter into the prepared dish.
  5. Mix the boiling water, sugar and cocoa together and pour evenly over the batter.
  6. Bake in the preheapted oven for 45 minutes or until the sponge is cooked.
  7. Serve hot dusted with icing sugar and accompanied with lashings of whipped cream, if wished.

Cooks Tips

- For a caramel-like flavour, use brown sugar - Add 1 cup diced fresh cherries or 1 cup raspberries when in season. - For a mocha pudding, add 1 tablespoon instant coffee to the sauce ingredients.
