Cafe Beef Nachos

Serves: 4-5

Ingredients

500 grams beef mince

1 onion, peeled and diced

35 gram packet taco seasoning mix

400 gram can Mexican-flavoured tomatoes

½ can water

Avocado Cream

2 avocados, halved and stoned

125 grams sour cream

juice ½ lime

To Accompany

diced tomatoes, grated cheese, nachos


Method

1.  Brown the beef mince and onion in a dash of oil in a hot frying pan. This is best done in two batches.

2.  Add the taco seasoning mix, tomatoes and water. Stir, cover and simmer gently for 15-20 minutes.

3.  Mash the flesh of the avocado with the sour cream and lime juice and season well with salt.

4.  To serve, pile the mince into a serving bowl and garnish with chopped tomato and red onion. Spoon the avocado cream into serving bowls and garnish with lime rind. Accompany with your favourite nachos and sour cream if wished.


Cooks Tips

Variation: Substitute chicken or pork mince for a tasty lower fat option. Add a can of red kidney beans, rinsed and drained at step 2 if desired. There are no comments for this recipe. You can leave a comment below.
