Ingredients
- 3 cups flour
- 2 tblsp baking powder
- ½ tsp salt
- 1 tsp dried mustard
- 125 grams Brie cheese, diced
- ½ smoked chicken breast, diced
- 1 avocado, stoned, peeled and diced
- 1 cup grated cheddar cheese
- 2 eggs
- 1¾ cups milk
- 100 grams butter, melted and cooled
Method
- Sift the flour, baking powder, salt and mustard into a bowl. Toss though the half the Brie and all the smoked chicken, avocado and grated cheddar cheese and make a well in the centre.
- In a jug blend together the eggs and milk and blend into the dry ingredients with the melted butter.
- Divide the mixture evenly between 12 well-greased muffin tins and top each with a piece of remaining Brie.
- Bake at 220ºC for 18-20 minutes until well-risen and golden. Cool in the tins for 5 minutes before enjoying.
