1 smoked chicken
6 apricots, stoned and thickly sliced
200 grams blanched beans or snowpeas
4 spring onions, finely sliced
salad leaves for 4
¼ cup apricot jam
1 tblsp curry powder or paste
½ cup mayonnaise
¼ cup sour cream or whipped cream (optional)
1. Pull the meat from the smoked chicken and cut into large chunks.
2. Place in a bowl with the apricots, snow peas, spring onions and salad leaves and toss to mix.
3. Serve in deep plates and bowl garnished with a spoonful of the Creamy Apricot Mayonnaise.
